About Bottle-Conditioned Ales
These beers ferment in the bottle, just as real ale ferments
in the cask at the pub. An obvious characteristic of real
ale in a bottle is that it contains a sediment. This sediment
is largely comprised of yeast and natural proteins and is
certainly not harmful.
This yeast is what ensures that the beer continues to ferment
and mature in the bottle. Bottle-conditioned beers are best
protected from bright light and stored upright in a cool
environment.
